Basil... mmmmmmmmmmmm

Helloooooo happy people!  It's been a long time since we did anything with this, and I'm going to attempt a revival.

My mom was just visiting me, and she brought LOTS of stuff from her barn garden!!!  Tomatoes, squash, green beans, snow peas, and BASIL!!!! 

Like, bags of it.  Which I need to do something with before it wilts.  So, my plan tonight is to make something with the fresh basil, and then turn the rest into basil puree to freeze and use later! 

What is YOUR favorite basil thing to make?  I have tons... I'll let you know what I come up with later tonight!

Just last night we made basil and spinach pesto. 2 cups of spinach and basil leaves (as much basil as we had, then spinach to supplement the rest of the cups, it worked out to be about half and half) then- a handful of parsley, 1/3 cups toasted pine nuts, half cup of Olive Oil (the better quality, the better this pesto is) and 1/2 clove of garlic. We also threw in 1/4 cup of lemon juice just cause we like it, but that wasn't part of the original recipe. Blended all of that up in the food processor. Just before serving we tossed this with 1/2 cup parmesan cheese and a whole bunch of noodles. YUM!

  2. btw, Basil and pumpkins were the only things I was successful at growing, and the basil even survived a move to Derwood. I'll try to get a picture of it tonight and throw that up on my blog. Love you guys!! And mIss each one of you fiercely right now...
